Chapel Hill Gorge Block Cabernet Sauvignon is handpicked from vines perched on the side of the Onkaparinga Gorge in McLaren Vale. The Gorge Block has gravelly soils over ancient rocks.
The fruit is crushed and open fermented. It receives gentle hand plunging to extract gentle tannins and ensure the wine expresses the unique characters of its site.
After two weeks on skins the wine is basket pressed. The free run and pressings are combined, then aged in tight grained French oak for 20 months. The percentage of new oak is kept low so the fruit is the focus.
There is no fining or filtering. Once bottled the wine ages for a further six months prior to release.
Deep purple, Chapel Hill Gorge Block Cabernet Sauvignon is full bodied with a core of dark fruits. Herb and stalky notes lead to a long, firm tannin finish. Cellaring potential is 15 years.
